By day, my world is centered on communication and public service. It is a fast-paced, high-responsibility role where clarity and focus are everything. Hill Top Brews is my creative outlet—a space where that same dedication to precision is channeled into the art of coffee.

My approach to roasting is also shaped by a unique personal perspective: I am deaf.

In the coffee industry, roasters often talk about listening for the audible "first crack" and "second crack" of the beans inside the drum to judge the roast. For me, the process is entirely visual, tactile, and aromatic. I rely on an intense focus on the shifting colors of the beans, the evolving aromas drifting from the trier, and precise temperature data curves.

Roasting this way requires absolute presence and intuition. It means I am completely locked into the machine and the coffee during every single batch, ensuring that nothing is left to chance.

The Art of Sensory Roasting

Because I don't rely on sound, I have developed a deep connection to the other elements of the roast cycle. Every five seconds matters. I track the transformation of the green beans as they turn from grassy yellows to deep, rich mahogany browns, paying close attention to the exact moment the silver skin chafes and separates. The aromas tell me everything I need to know about sugar development—moving from toasted grain to sweet caramel, and finally to the rich, complex notes of fully developed specialty coffee.

This isn’t about guessing; it is about tracking data and pairing it with absolute sensory focus.

Every single origin lot that leaves the roastery has been meticulously profiled, cupped, and tested. When you open a bag of Hill Top Brews, you are tasting a roast that has been guided by sight, scent, and a dedication to finding the absolute peak of that coffee's potential.
